Sarawak Pepper
Sarawak (Malaysia) and Kampot (Cambodia) are muy famous for their productions of White and Black Peppers. The Black pepper is produced from the still-green unripe drupes of the pepper plant. The drupes are cooked briefly in hot water, both to clean them and to prepare them for drying. The heat ruptures celle walls in the pepper, speeding the work of browning enzyme during drying. The drupes are dried in the sun or by machine for severay days, during which the pepper around the seed shrinks and darkens into a thin, wrinkled black layer. Once dried, the spice is called black peppercorn. The White pepper consists of the seed of the pepper plant alone, with the darker-colored skin of the pepper fruit removed. This is usually accomplished by a process known as retting, where fully ripe red pepper berries are soaked in water for about a week, during which the flesh of the pepper softens and decomposes. Rubbing then removes what remains of the fruit, and the naked seed is dried. Sometimes alternative processes are used for removing the outer pepper from the seed, including removing the outer layer through mechanical, chemical or biological methods.

OUR BUSINESS
Our business and philosophy
Understand the specific needs of our consumers, promote an environmentally friendly farming, in harmony with the traditions. This way of thinking and working enables us to propose the best products for our customers
Originality and Quality
All the varieties of garlic, onion, shallot and squash which provide visual and taste improvement are integrated in our ranges. Indeed, CondiFrance was a forerunner for several varieties, like red garlic from Argentina or Delica squash from France.
Our products are selected, prepared and packaged by hand, respecting the customs, traditions and know-how of the local farmers. Thanks to this handmade work, we ensure high-end products which satisfy our consumers with their visual and organoleptic specificities
Secure our supply processes and keep the local activity
The French crops can be commercialized during 6 months. That’s why CondiFrance tries to establish partnerships with farmers around the world: Spain, Argentina, Chile, Peru. But these imported products have to be in line with CondiFrance’s philosophy and requirements. The final packaging of these imported products is fulfilled by our partnerships around Beaumont-de-Lomagne.
